Can you make vegan tuna? Yes, you can with watermelon! Chef Ayushi Gupta-Mehra shared a recipe for Vegan Tuna Crispy Rice Bites.

- 2 cups of cubed watermelon - 4 tbsp light soy sauce - 1 tbsp vinegar / lime juice - Honey to taste - 1 tbsp sesame seeds, toasted - 1.5-2 cups of short-grain rice (sushi rice/ jasmine rice) - 1-2.5 tbsp chilli oil - 1-2 tbsp vinegar

First, chop the watermelon into cubes or wedges till it amounts to two cups.

Then, add light soy sauce, vinegar, honey, sesame seeds (toasted) in a bowl with cubed watermelon and gently mix them. Refrigerate this for at least 4 to 6 hours or overnight.

To make the crispy rice, mix short-grain rice, chilli oil and vinegar.

In a loaf tin, add the rice mixture and flatten it out completely. Freeze this overnight and slice into blocks.

Then, shallow-free these rice bites till they are crispy.

Then, assemble the avocado, spicy mayo and vegan tuna (watermelon). Finish with sesame seeds. Your Vegan Tuna Crispy Rice Bites are ready!
